Here is the story behind these cookies. One night wondering through the natural and organic aisles of the Superstore, I stumbled across these:
See, when you are a stay at home mom with almost no friends, grocery shopping by yourself at 9 PM is a big deal! I can actually read the labels and kind of fulfill the socializing aspect of my life?! Is that right? Don’t judge, I’m ESL, although a good one. And I don’t care. I don’t!:)
I decided to be true myself on my blog (get ready for some weed stories). Otherwise, what’s the point of blogging? It’s my space and I should write about my life. I don’t have friends or family living close by, that’s why I guess I have time to cook, work out and run this blog. It’s kind of cool because you are totally free to do what you want to do, but on the other hand I admit it’s a bit lonely.
So, when I saw organic puffed brown rice and puffed kamut cereals, I immediately thought of no bake cookies, bars and other goodies.
Nature’s Path is one of my favourite organic cereal brands.
I recently discovered my body doesn’t digest well whey protein, so I’m trying to use it as less as possible. I went to the local grocery store (Save on Foods) and got hemp protein powder. Feel free to use whey protein powder instead of hemp.
The colour is nasty. I can only imagine the colour banana bread will turn out. The solution: cover it with chocolate. That’ what I did. I used hemp protein for baking these no bake protein+chocolate+rice krispies cookies. No aftertaste, great!
As I got home, my visiting+curious+non-English speaking mother-in-law made me look up the translation of hemp in Russian.

That’s weed, people! Apparently, hemp protein powder is made of hemp seeds. The buds and leaves are used for smoking.
So, we are all good although every time I feed my family any dessert now, the questions are being raised. We have good laughs while eating “weed cookies”.:)
“Weed cookies” are super light, crunchy and chocolatey at the same time. When you take a bite, it’s like biting on a piece of Aero. You know those air bubbles inside?! Same feeling here.
Chocolate has coconut flavour because I used coconut oil to act as a binder in addition to healthy fat content. I used barely any agave nectar, just 3 tablespoons. I won’t substitute agave with stevia because it acts as a binder.
P.S. It’s not my cat’s hair stuck to the cookies. Don’t be grossed out. It’s a piece of cottonwood from running around the house chasing the best light for the photos.
These protein+chocolate+rice krispies cookies are perfect for summer as they require no baking. Although Vancouver just joined the rest of the world celebrating hot summer days, I can still get away with baking some double chocolate protein cookies.
Vegan, vegetarian, gluten free, clean eating, superfood…They are everything a healthy fit girl needs!
When kept frozen the cookies taste extremely crunchy straight out from the freezer and there is no need to thaw them.

These protein+chocolate+rice krispies cookies are perfect for summer as they require no baking. Super light, crunchy and chocolaty at the same time. When you take a bite, it's like biting on a piece of Aero. When kept frozen they taste extremely crunchy straight out from the freezer and there is no need to thaw them.
Ingredients
- 1/2 cup coconut oil
- 1/2 cup smooth peanut butter, unsalted & unsweetened, not crunchy
- 3 tbsp agave nectar
- 1/4 cup cocoa powder, unsweetened
- 1/4 cup or 1 scoop (30 g) hemp or any protein powder
- 1 + 1/2 cups puffed brown rice
Directions
- Line baking sheet with parchment or wax paper and set aside.
- In a medium saucepan melt coconut oil on low heat. Add peanut butter and agave nectar and whisk together until all ingredients have melted and are combined. Add cocoa powder, whisk just enough to incorporate it with other ingredients and remove from heat.
- Add protein powder and whisk again until the mixture is smooth. Add puffed brown rice and mix gently with a spatula until well combined. The mixture should be scoopable with a spoon and ingredients should stick together in order to form cookies. Proceed to next step immediately.
- Immediately place full tablespoons of mixture in a shape of round/oval cookies leaving some space in between on a baking sheet lined with parchment or wax paper. Refrigerate for an hour or freeze for at least 30 minutes for cookies to set.
